Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 3/4 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest

Coating

  • 1/2 cup powdered sugar for coating (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Mix in the egg, vanilla extract, lemon juice, and lemon zest. Beat until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  • Cover and chill the dough in the refrigerator for at least 30 minutes.
  • Scoop out tablespoon-sized portions of dough, roll them into balls, and coat them in powdered sugar if desired.
  • Place them on the baking sheet about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are slightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, add white chocolate chips, poppy seeds, or a lemon glaze on top after baking.
