Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
Mix in the egg, vanilla extract, lemon juice, and lemon zest. Beat until well combined.
Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
Cover and chill the dough in the refrigerator for at least 30 minutes.
Scoop out tablespoon-sized portions of dough, roll them into balls, and coat them in powdered sugar if desired.
Place them on the baking sheet about 2 inches apart.
Bake for 10-12 minutes or until the edges are slightly golden.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For extra flavor, add white chocolate chips, poppy seeds, or a lemon glaze on top after baking.
