Ingredients
  

Marinated Chicken

  • 1 lb chicken breasts or thighs boneless, skinless
  • 3 tbsp olive oil extra virgin
  • 2 tbsp lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika optional
  • salt and black pepper to taste

Base

  • 2 cups cooked basmati rice, quinoa, or couscous

Toppings

  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled

Tzatziki Sauce

  • 1 cup Greek yogurt full-fat for creaminess
  • 1/2 cucumber grated and drained
  • 1 tbsp lemon juice
  • 1 clove garlic minced

Instructions
 

  • Mix olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper. Marinate chicken for 30 minutes.
  • Grill chicken for 5-7 minutes per side or bake at 400°F (200°C) for 20-25 minutes. Let rest and slice.
  • Assemble the bowl: Add rice, chicken, cucumber, tomatoes, red onion, olives, and feta. Drizzle with tzatziki and serve.
