In a mixing bowl, combine Greek yogurt, olive oil, lemon juice, lemon zest, garlic, oregano, cumin, salt, and black pepper.
Add the chicken and coat thoroughly. Cover and refrigerate for at least 30 minutes (or up to 8 hours for maximum flavor).
Grate the cucumber and squeeze out excess moisture using a paper towel or cheesecloth.
In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, chopped dill or mint, olive oil, salt, and black pepper. Stir well and refrigerate for 15 minutes.
Preheat the grill to medium-high heat. Brush the grates with oil and grill the chicken for 5-7 minutes per side until fully cooked (165°F internal temperature).
Alternatively, bake the chicken at 400°F (200°C) for 20-25 minutes or pan-sear it in a skillet for 6-7 minutes per side.
